Dr. Edward H. Davis, Chair of the Department of Geography at Emroy & Henry College, studies the Southern tradition of foodways, specifically the growing of collards in the US South. Through the course GEOG 240 Geospatial Techniques, I utilized ArcGIS 10.2.2 integrated with a massive amount of survey data from Microsoft Excel to spatially display many of the foodways patterns Dr. Davis studies.
